Ingredients List
3 cups of arugula
½ red onion, sliced or diced
3 limes, Juiced
3 cups of cubed watermelon
1 block of feta cheese cut into cubes
½ cup of fresh mint
¹⁄8 cup of olive oil
½ cup of sliced black olives
½ tsp of fennel seed
Black Pepper to Taste
Directions
1 Place the onion in lime juice and soak for 12-15 minutes
2 Toss feta with parsley and mint first, then add watermelon, arugula, olives, lime juice mixture, and olive oil and toss some more.
3 Sprinkle with black pepper and fennel seeds.
