5 tomatoes, wedged
6 eggs, hard boiled
1 cucumber, cubed
1/2 red onion, sliced
2 avocados, diced
2 Tablespoons cilantro, chopped
2 Tablespoons olive oil
1 lemon, juiced
1 teaspoon salt
1 pinch black pepper
Directions
1 Place tomatoes, eggs, cucumber, red onion, avocado, and cilantro into a large salad bowl.
2 Pour olive oil, lemon juice, salt, and pepper into salad and combine ingredients gently.
3 Add more salt ad pepper to taste.
