1 cup of almonds
1 cup of cashews
1 cup of coconut flakes
1 1/4 cup of raisins or dates
1 dash cinnamon
1 1/2 cups of coconut water or coconut milk
4 eggs
2 Tablespoons maple syrup
5 apples
Directions
1 In a food processor, mix the almonds, cashews, and coconut flakes to combine; then, add raisins (or dates) for sweetener and stickiness texture.
2 Put the mixture inside a cake pan, and press it into the base. Putting parchment paper underneath helps separating later.
3 Peel apples (or not peel depending on taste) and cut into wedges; then, spread the apples on top of the base layer.
4 For the “glazing,” use a 2+ cup measuring glass to mix the eggs, a dash of cinnamon, maple syrup, and coconut water/or coconut milk. Note: After placing the eggs, cinnamon, and maple syrup into the measuring glass, fill the rest of the measuring glass with coconut water until the mixture reaches the 2 cup line. Mix evenly with a fork to break up the eggs; then, pour the “glaze” over the apples. Pre-heat the oven to 350 degrees and bake for 40 minutes. Make sure the glaze is fully cooked.
