Here is a great trick I added to our Pinterest boards for freezing fresh herbs like basil, chives, cilantro, parsley, mint or tarragon. Freeze them in ice cube trays, and the flavor of your fresh garden herbs will keep several months.
First, wash the herbs and run them through a Salad Spinner. Chop them up with herb scissors or your favorite chopper or mincing knife. Then, stuff each ice cube tray (really pack it down) and gently add water to top off each cube. Place in freezer until frozen solid. Once the ice cubes are frozen, remove from the tray and store in zip closure bags. Now you’re ready to pop the cubes into soups and recipes as needed.
You can also make pesto sauce and freeze the same way. I freeze the entire recipe with the parmesan in the ice-cube trays, but I know some people do like to omit the parmesean and add it during cooking time.
Here is the Pesto Sauce recipe I grew up with (although Mom probably snuck in wheat germ too… she added wheat germ to everything):
2 cups packed, coarsely chopped fresh basil
1/2 cup grated Parmesan cheese
1/2 cup cold pressed extra virgin olive oil
3 tablespoons toasted pine nuts (buy toasted or toast yourself)
1/2 teaspoon salt
1/8 teaspoon pepper
3 cloves garlic, peeled
